I bet you didn't think of mixing coffee and pink pepper to coat your flank steak before throwing it on the grill.

Ingredients:

-500gr Canadian flank steak (2 very meaty slices)

-a chopped French shallot

-75 ml of maple molasses

-100ml of Guinness beer

-10 gr of coffee "CoffeeQueen" medium grind

- crushed pink pepper

- fleur de sel to taste

Methodology :

1.Mix the molasses, beer and shallots.

2. Marinate the flank steak for a period of 3 to 4 hours (or even overnight for better maceration).

3.Remove the excess marinade on each flank steak using a kitchen knife, sprinkle with ground coffee and pink pepper and leave at room temperature for a period of 45 min.

4.Grill on the BBQ or a cast iron pan for 3 min on each side over medium high heat for optimal cooking (medium rare).

5.Remove from the heat, cover and keep for the same cooking time (6 min). Slice against the grain.

Chef's suggestion: serve with potato mousseline and Quebec asparagus sautéed in butter.
